- 6 large green peppers
- 1 lb. ground beef, browned
- 2 T minced onion
- 1 tsp. salt
- 1/8 tsp. garlic powder
- 2 c. cooked rice
- 15-oz. can tomato sauce
- 3/4 c. shredded mozzarella cheese
1. Cut peppers in half and remove seeds.
2. Combine all ingredients except peppers and cheese.
3. Stuff peppers with ground beef mixture; place in crock pot.
4. Cover. Cook on low for 6-8 hours or high for 3-4 hours.
5. Sprinkle with cheese during last 30 minutes.

6 to 8 hours in the crock pot was far too long. Made them over the weekend. The green pepper tasted very bitter from overcooking them. 4 hours is more realistic. Ate the inside of the green pepper which was very tasty but had to throw the pepper away. Will make again but not in the crock pot.
Jenny, thanks for your comment.. Each crock pot is different, and how full the crock pot is makes a difference too. The crock pot should be 2/3 full to have it crock for the full time either on Low or High! Happy Crocking!
I made these and used gr. Turkey and 2% cheese they were great haven’t figured the calories but sure they where . cut a good amount .I assume a serving is 1/2 pepper. Even my skinny friends like them.
