- 5 lbs. red potatoes, cut into chunks
- 1 T. minced garlic, or to taste
- 3 cubes chicken bouillon
- 8 oz. container sour cream
- 8 oz. pkg. cream cheese, softened
- 1/2 c. butter
- salt and pepper to taste
This is a great recipe for the holidays, as you can make it ahead and it will be hot, not to mention YUMMY!
1. In a large pot of lightly salted boiling water, cook the potatoes, garlic, and bouillon until potatoes are tender but firm, about 15 minutes. Drain, reserving water.
2. In a bowl, mash potatoes with sour cream and cream cheese, adding reserved water as needed to attain desired consistency.
3. Transfer the potato mixture to the crock pot.
4. Cover. Cook on Low for 2 to 3 hours.
5. Just before serving, stir in butter and season with salt and pepper to taste.

what size of crock pot did you use?and if i doubled this recipe would it need more cooking time? thanks
Hi Coreen! If you double this recipe, that will make a very full crock pot even if you used a 6-7 qt. crock pot! I would say to make it in two seperate crock pots…. Happy Crocking!
I’m excited to try this, I never have enough stove/oven space for everything on Turkey Day, so it’ll be nice to have something in the crock pot and out of the way! I’ve never had mashed potatoes with cream cheese and or sour cream, how terrible would I wreck this recipe if I omitted them? I would hate to experiment on such an important day!
Morgan…. If it is something you don’t think you would like, then definitely omit, but with that said you may have it on hand, so if you think it needs it you can add at the end. But you can also make your own Mashed Potato recipe and just keep it in the crock pot to keep it warm, especially if you have a warm setting on your crock pot! That way you wouldn’t be experimenting on such an important day! Happy Crocking!
