- 1 lb. lean ground beef, browned and drained
- 2 pkgs. taco seasoning mix
- 16 oz. tomatoes with green chilies, undrained
- 16 oz. black beans, canned, undrained
- 16 oz. corn, canned, undrained
- 1 can black olives, chopped or sliced
- 1 onion, medium, chopped
- 1/2 bell pepper, chopped
- 4 tomatillos (optional), chopped
When it comes to Crock Pot Taco Soup this is one of the very best! So So… YUMMY!
1. Place everything in a large crock pot, add water, if necessary, to fill.
2. Cover. Cook on Low for 5 or more hours until flavors are blended.
3. Top each bowl with a handful of sredded cheddar cheese.
4. Serve with sour cream, taco chips and salsa on the side.

was wondering with this recipe if we cook it on low or high? i was thinking low so it dont burn but wasnt sure thanks

How much does this make and what size crock pot did you use for it? Mine is 1.5 qrt, just my boyfriend and I, just wondering if I should cut down amounts.
Hello Nikki! The serving size is in the upper right hand corner, and it makes enough soup for 10 servings. You could cut the recipe in half, but it still may be too much for a 1 1/2 quart crock pot, but it is worth a try! If you make it you can freeze half of the prepped recipe in your freezer, and have it for another time! Hope this helps and Happy Crocking!
