- 2 c. old fashioned oats (example Quaker oats)
- 4 c. water
- 1/2 c. pumpkin
- 4 tsp. pumpkin pie spice
- 4 T. brown sugar, or Stevia brown sugar substitute
- 4 (1 g) packet Splenda sugar substitute (or Stevia)
When I think of the season Fall I think of Pumpkin, I also think of Crock Pot Pumpkin Oatmeal!
1. Combine all ingredients in your crock. Adjust sugar if you do not like your Oatmeal too sweet!
2. Cover. Cook on Low for 4-6 hours.
3. Give your oatmeal a good stir, and I enjoy with some flavored coffee.

What amount of sugar would you use instead of the splenda/artificial sweetner. My coworker cannot use any artifical sweetners and I would like to make this for a breakfast potluck.
Hi Katrinka! You can sub 2 & 1/2 Tablespoons of white sugar for the 4 Splenda packets. Just a note, many people who cannot have sugar substitutes are able to have Stevia as it is all-natural and plant derived. I would definitely check with her before using it though. Happy Crocking!

Do you think I could use skim milk instead of water? I’ve done that with other overnight crockpot oatmeal recipes (e.g., apple cinnamon), and we like our oatmeal creamy.
