- 4-5 chicken breast, frozen
- 15 oz. black bean, canned or half a bag cooked beans
- 12 oz. Salsa, Jar
- Corn, frozen or canned
- 8 oz. cream cheese
- Brown Rice
Our Facebook friend Rachel B. says her Crock Pot Black Bean Chicken is the best recipe – so good and chicken is super tender! And not to mention so, so easy….
1. Place 4-5 frozen chicken breasts in the bottom of the crock pot.
2. Combine 1 can black bean or half a bag cooked black beans, jar of any salsa, frozen or canned corn.
3. Cover. Cook on High for 4 hrs. or on Low for 6-7 hours.
4. Add a 8 oz. package of cream cheese during the last half hour and place on top to melt then stir in and enjoy!!
Serve over brown rice.

This was delicious! We had it over rice last night and it was a huge hit! I added some minced hot peppers to the leftovers today and have wrapped it in lettuce leaves for lunch and I’m thinking it would work brilliantly as a burrito filling. Yum!!

This recipe is really good. I served it with some spanish rice and avocados, everyone loved it.
Made this as an appetizer and served it with tortilla chips instead of rice. Yummy…big hit!! Bringing it to my new years eve celebration tonight. Soooo easy, just grab your crock and go
Any suggestions if I can’t add cream cheese (I can’t do cheeses)? Might topping with sour cream work?
