- Apple Mixture:
- 20 oz. apple pie filling, apple slices broken up somewhat
- 1/2 tsp. cinnamon
- 3 T. sugar, brown
- Cake Batter:.
- 18 oz. cake mixes, small yellow, Jiffy - 9 oz. each
- 2 eggs, beaten
- 1/2 c, sour cream. light
- 3 T. butter, margarine, softened
- 1/2 c. evaporated milk
- 1/2 tsp. cinnamon
- 1 tsp. butter or margarine for greasing crock pot
Crock Pot Apple Pie Coffee Cake is a recipe I often make for a brunch!
1. Mix ingredients for apple mixture in a bowl.
2. Combine batter ingredients; mix well.
3. Generously butter the sides and bottom of a 3 1/2 quart crock pot.
4. Spread about half the apple mixture in the bottom of the pot.
6. Spoon 1/2 the batter over the apple mixture.
7. Spoon the remaining apple mixture over the batter, then cover with remaining batter.
8. Cover. Cook on High for 2 to 2 1/2 hours.
9. Turn off crock, leave cover ajar slightly, and cool for about 15 minutes.
10. Invert on to a plate, retrieving any apples left in the bottom of the pot and placing on top of the cake.
NOTE: You can substitute other pie fillings, such as cherry, blueberry, peach and etc.
