Ingredients
1 1/2 lbs. beef, chuck roast, sliced into thin strips1 c. beef broth
1/2 c. oyster sauce (found at grocery store with Asian foods)
1/2 – 1 lb. broccoli, florets, fresh or frozen (I prefer fresh)
1/4 c. water
2 T. cornstarch
Cooked rice (optional)
Sesame seeds (for garnish)
Slow Cooker Beef & Broccoli is a real keeper, and the Oyster sauce is a key flavor in this recipe! Why go out to eat when you can make this delicious dish at home? ENJOY!
- Arrange beef strips in a slow cooker and pour beef broth and oyster sauce over the beef. (NOTE: You can sub soy sauce if you prefer.)
- Cover & Crock on LOW for 6–8 hours or on HIGH for 3–4 hours or until beef is very tender.
- Microwave FRESH broccoli in microwave safe bowl with 1/4 c. water. The broccoli should be tender in 4–5 minutes. (NOTE: If using frozen broccoli, follow directions on packaging.)
- Combine cornstarch and 2 tablespoons of the cooking liquid (liquid from the broth and juices of the meat in the crock) in a small bowl and stir until smooth.
- Slowly add cornstarch liquid mixture to the crock and stir in until well combined.
- Fold drained broccoli into the slow cooker.
- Leave uncovered. Cook on High for about 15 minutes or until sauce is thickened.
Serve over your favorite cooked rice and garnish with sesame seeds!

Do you think you could you slice the beef, add broth and oyster sauce and freeze until you are ready to use?

We had this for dinner tonight and loved it. I used chuck roast cut thin by the butcher. It had great flavor. Unanimous vote for it being a keeper. Didn’t tell my family about the oyster sauce and none of them could tell. It just tasted great.
Could you make this with chicken and chicken broth? Would the cooking time still be the same?
In the recipe it says I can sub out Soy Sauce for Oyster – do you have a suggested measurement for how much Soy Sauce you would use instead of the Oyster Sauce?
Hi Sara… this is definitely a personal preference. I have not used the soy sauce, as far a s measurement, you should use what you would feel would be a good measurement. You can always not put as much, and have the soy sauce on the table in case you feel it needs more. Hope this helps, and Happy Crocking!

Vickie it does not. If I list something as optional, I usually do not include the nutritional value for optional.
I have a ninja crockpot that has stove top method also. Should I turn it on stovetop when lid is removed at the end for 15 min.?
Michel, I am sorry I am not familiar with your slow cooker. I would think you would still leave it as a slow cooker? Please give me feedback as I would like to know for the future what is the best way for this style slow cooker. 🙂
Why don’t you cook the broccoli in the crock pot?
Hi Kat, Thank you for posting your question. If you put the broccoli in for the whole time, it would become very soft and mushy. But putting it in at the end cooked, it is a bit more crunchy for the recipe… Hope this helps, and Happy Crocking!

What brand of slow cooker do you use? There are so many on the market – I don’t know what to buy?
Does anyone make a smaller version of this crock pot? It’s me most of the time, but I occasionally have family over. Most of the smaller versions have a low or high version – but nothing for all day cooking.

Judy you can halve the recipe.. If you have a smaller slow cooker, you just need to make sure it is 1/2 to 2/3 full to crock properly. If you have a programmable slow cooker, it will turn to warm. If your slow cooker is not programmable, some of my Facebook friends have suggested using a wall timer to turn the slow cooker off in their absence. Hope this helps! 🙂
I made this one. Good thing my husband was home because he said he smelled burning after about 5 hours so he turned it to warm and saved it. I used frozen broccoli and cooked it in the microwave for a minute less than the directions said so that it would still be crisp. I added it to the final 15 minute cooking time along with a can of chop suey vegetables and served over rice with crispy chow mein noodles. It was good. I tried this last night and it tasted delicious. Only problem I had was almost not sauce. Maybe I cooked it too long (just on low for 7 hours) or trimmed to much fat off the beef? It seems as though I needed to double the amount of broth and oyster sauce to get and actual sauce from this recipe instead of just flavored beef.

I just made this tonight and loved it. It did taste a little salty to me tho. Do different oyster sauces taste different? All I could find in our Asian section at the grocery store was oyster flavored sauce so I don’t know if that’s different. Mine was also a bit dry so I added a little more water and that helped.

Doubled the recipe and used 1/2 teriyaki and 1/2 oyster sauce and 1 tsp of ground ginger. Also added asparagus with the broccoli…..delicious!

This was really good, I loved it actually! Here are the changes I made, first I had left over stew meat in the freezer, so it was more chunks then strips of beef. Second I added a clove of garlic, and a tablespoon of fresh finely diced ginger. This looks really tasty, and I LOVE beef and broccoli! But the nutritional information (calories, carbs, protein) seems really high for a sixth of the amount of beef, broccoli, beef broth and oyster sauce used in the recipe. Could you explain how you determined the nutritional info? Thanks!
Cooked this tonight for dinner, and I was very disappointed. The sauce based on the recipe was not enough and I had to add more. The beef fell apart into mush when I stirred in the (undercooked) broccoli. And it was completely bland. My kids wouldn’t even eat it.

I have a 4 quart crock pot and whenever I see you post recipes, you don’t state what size crock pot is needed for it. Can I use my 4 quart crock pot for all your recipes and, if not, how would I know how to adjust the amounts of ingredients to accommodate my smaller crockpot?
Lorraine, I don’t always state the slow cooker size as some people will not consider a recipe they may really want to make if they do not have the size stated. The key to any slow cooker dish is to make sure your crock is 1/2 to 2/3 full for your dish to crock properly. You will probably be close, you should be fine with the 4 quart slow cooker on this recipe. Hope this helps, and Happy Crocking!

This was really delicious….but INCREDIBLY salty. I did not add the broccoli to the pot, thank goodness because I needed it and the rice to temper the salt. Will try again with low sodium soy sauce next time.
