Slow Cooker Beef & Broccoli

  • Cooking Time:

    6 - 8 hours on Low or 3 - 4 hours on High
  • Servings:

    6

Ingredients

1 1/2 lbs. beef, chuck roast, sliced into thin strips
1 c. beef broth
1/2 c. oyster sauce (found at grocery store with Asian foods)
1/2 – 1 lb. broccoli, florets, fresh or frozen (I prefer fresh)
1/4 c. water
2 T. cornstarch
Cooked rice (optional)
Sesame seeds (for garnish)

Slow Cooker Beef & Broccoli is a real keeper, and the Oyster sauce is a key flavor in this recipe! Why go out to eat when you can make this delicious dish at home? ENJOY!

  1. Arrange beef strips in a slow cooker and pour beef broth and oyster sauce over the beef. (NOTE: You can sub soy sauce if you prefer.)
  2. Cover & Crock on LOW for 6–8 hours or on HIGH for 3–4 hours or until beef is very tender.
  3. Microwave FRESH broccoli in microwave safe bowl with 1/4 c. water.  The broccoli should be tender in 4–5 minutes. (NOTE: If using frozen broccoli, follow directions on packaging.)
  4. Combine cornstarch and 2 tablespoons of the cooking liquid (liquid from the broth and juices of the meat in the crock) in a small bowl and stir until smooth.
  5. Slowly add cornstarch liquid mixture to the crock and stir in until well combined.
  6. Fold drained broccoli into the slow cooker.
  7. Leave uncovered. Cook on High for about 15 minutes or until sauce is thickened.

Serve over your favorite cooked rice and garnish with sesame seeds!

Do you think you could you slice the beef, add broth and oyster sauce and freeze until you are ready to use?

This looks so good!! Do you think adding some medium sized cooked shrimp would change the flavor?

Thanks for sharing all your wonderful recipes. I am having a hard time picking which one I want to start with. Yumm!

We had this for dinner tonight and loved it. I used chuck roast cut thin by the butcher. It had great flavor. Unanimous vote for it being a keeper. Didn’t tell my family about the oyster sauce and none of them could tell. It just tasted great.

Could you make this with chicken and chicken broth? Would the cooking time still be the same?

In the recipe it says I can sub out Soy Sauce for Oyster – do you have a suggested measurement for how much Soy Sauce you would use instead of the Oyster Sauce?

Does anyone make a smaller version of this crock pot? It’s me most of the time, but I occasionally have family over. Most of the smaller versions have a low or high version – but nothing for all day cooking.

Jenn,
We have no microwave, so would I just “par-boil” the broccoli?

Deb

I was really hoping the broccoli went into the crockpot at the start – so I’m wondering if you think I could add the raw broccoli at some point in the cooking process – like say an hour before it’s done – what do you think?

If I were to half this recipe since it’s just for me, would that change the cooking time? Also, what happens if I don’t get home for 10-12 hours? Is the dish ruined? Thanks!

I made this one. Good thing my husband was home because he said he smelled burning after about 5 hours so he turned it to warm and saved it. I used frozen broccoli and cooked it in the microwave for a minute less than the directions said so that it would still be crisp. I added it to the final 15 minute cooking time along with a can of chop suey vegetables and served over rice with crispy chow mein noodles. It was good. Next time, I will make it when I am home so I am able to keep… Read more »

I tried this last night and it tasted delicious. Only problem I had was almost not sauce. Maybe I cooked it too long (just on low for 7 hours) or trimmed to much fat off the beef? It seems as though I needed to double the amount of broth and oyster sauce to get and actual sauce from this recipe instead of just flavored beef.

I just made this tonight and loved it. It did taste a little salty to me tho. Do different oyster sauces taste different? All I could find in our Asian section at the grocery store was oyster flavored sauce so I don’t know if that’s different. Mine was also a bit dry so I added a little more water and that helped.
Thank you for this awesome recipe! I will be sharing it.

This was really good, I loved it actually! Here are the changes I made, first I had left over stew meat in the freezer, so it was more chunks then strips of beef. Second I added a clove of garlic, and a tablespoon of fresh finely diced ginger. And then my biggest mistake was putting in the raw fresh broccoli about an hour and a half before it was ready to serve. That was way to long to cook, it got to soft. Also I should have added more broccoli because I love broccoli. It was still very good, it… Read more »

This looks really tasty, and I LOVE beef and broccoli! But the nutritional information (calories, carbs, protein) seems really high for a sixth of the amount of beef, broccoli, beef broth and oyster sauce used in the recipe. Could you explain how you determined the nutritional info? Thanks!

Cooked this tonight for dinner, and I was very disappointed. The sauce based on the recipe was not enough and I had to add more. The beef fell apart into mush when I stirred in the (undercooked) broccoli. And it was completely bland. My kids wouldn’t even eat it.

OMG! Made this today. Added the juice and zest of 1 mandarin orange and a tablespoon of chili paste with garlic. Suddenly, it’s the yummiest Orange Beef & Broccoli ever! Thanks for the recipe!!

Can I substitute frozen boneless chicken for the beef? And if so should I swap out the beef broth for chicken broth or gravy?…or do you have a similar recipe for a Chinese Chicken and broccoli crock dish?!?

I have a 4 quart crock pot and whenever I see you post recipes, you don’t state what size crock pot is needed for it. Can I use my 4 quart crock pot for all your recipes and, if not, how would I know how to adjust the amounts of ingredients to accommodate my smaller crockpot?

Hi Jenn,
I know you said to use a substitute sauce that my family will like. But when you said that soy sauce could be used as a substitute, was that in place of the beef broth or the oyster sauce or both? Thank you in advance. Can’t wait to try this!

Where does the 58 grams of carbs come from? With the ingredients listed it doesn’t make sense.

This was really delicious….but INCREDIBLY salty. I did not add the broccoli to the pot, thank goodness because I needed it and the rice to temper the salt. Will try again with low sodium soy sauce next time.
