Ingredients
2 - 3 lbs. boneless chicken thighs, cut in 1 1/2 inch pieces1/2 of a red pepper, thinly sliced (or color pepper of your choice)
1 tsp. garlic powder
4 T. Coconut Aminos
2 T. Almond Butter
1 T. Raw Honey
2 T. Rice wine vinegar
2 tsp. olive oil
1/2 tsp. red pepper flakes
1/2 tsp. of Black Pepper
1 T. minced ginger
1 carrot, thinly shredded
Bib lettuce, or other lettuce for wraps
An Asian classic that packs a punch of flavor! Slow Cooker Paleo Asian Chicken Lettuce Wraps make a great light lunch or dinner idea!
Note: Stick to the ingredient list to keep this Paleo. However if that’s not important to you, then you can sub ingredients such as soy sauce for coconut aminos and (dairy) butter or oil for the almond butter.
- Liberally season chicken thigh pieces with salt, pepper, and garlic powder. Place meat in crock.
- Next, combine all other ingredients in small bowl
- Pour over chicken in crock.
- Cover. Crock on Low for 4 hours or until chicken is tender and cooked through.
- Garnish with shredded carrots or cabbage, chopped jicama, and/or cilantro. and serve in lettuce pieces to make “wraps”

I think butter lettuce would be a great option too 🙂
You can find a variety of them at PF Changs.
Boston Bibb lettuce – found in most grocery stores – are perfect because the leaves are large and curve naturally around the filling
What is Coconut Aminos?

Where is the best place to get coconut aminos and how are they packaged? Like what section of a health food store I’m guessing!
You can get coconut aminos at the health store. I use Braggs liquid aminos and it tastes better than soy sauce!

Hi Katrina, you can use peanut butter, coconut butter, Hazelnut butter, pecan butter, Pistachio Nut Butter, Macadamia Nut Butter or even Pumpkin Butter. There are really tons of butter you an use. Hope this helps!

I used soy sauce and not almond butter as it was too expensive and I did not know if I could sub it for pnut butter so I didn’t. Mine turned out nothing like the above picture :/ It’s basically crockpot chicken. I guess these two ingredients made a difference?

Earlier you state you can use peanut butter, aren’t peanuts to be avoided when following a paleo diet? Just wondering, (I thought legumes were a no no)
Yes, Janet, you are correct. Tree nuts are to be avoided, but other “nuts” like almonds, cashews, or sunflower seeds (and their butter versions) can be used instead of the peanut butter.
I subbed Tamari for the aminos since it is gluten free soy sauce with a deeper flavor. And used sunflower seed butter. They came out great. A tad watery on the sauce though..

You can use frozen chicken, it will normally need to cook a bit longer than a recipe will call for, other than a recipe that actually states chicken should be frozen. Thank you for the question, and Happy Crocking!

This was good but was quite watery and looked nothing like the picture.
Lisa Russell I am not sure why it was watery unless your chicken was frozen? But you can always use some corn starch diluted in water until smooth and stir it into the sauce to thicken it up the next time. But glad it was good for you. Thanks for posting back! 🙂
