Ingredients
Meat from a Cooked Rotisserie Chicken, 1-1/2 inch pieces1 Medium Red Onion, diced
1 Large White Onion, diced
1 Large Carrot, peeled & sliced
1 T. Minced Garlic
1 tsp. Hot Sauce
2 T. Tomato Paste
1 tsp. Cumin
1 tsp. Basil
1 tsp. Coarse Salt
1/2 tsp. Pepper
14 oz. Diced Tomatoes
1 lb. Raw Shrimp, peeled & deveined
2 c. Cooked Rice, optional

- Combine all ingredients EXCEPT shrimp and rice in slow cooker.
- Cover. Cook on Low 4 hours.
- Add shrimp and stir.
- Cover. Cook on High for an additional 15 minutes.
- Serve over hot, freshly cooked rice.
