Ingredients
1 lb. Frozen Tater Tots (about half of a 32oz. bag)1 lb. Bacon, cooked and crumbled or 12 oz. Package of Canadian Bacon, chopped into small pieces
1 Large White Onion, chopped
1 Green Bell Pepper, diced
2 c. Grated Sharp Cheddar Cheese
1/4 c. Grated Parmesan Cheese
8 eggs
1 c. Milk
1 tsp. Ground Mustard
1 T. Corn Starch
Salt & Pepper, to taste
- Layer ingredients in a 5 quart slow cooker starting with half of the tater tots. Follow with half each of the bacon, onions, green peppers, and cheeses. Repeat layers again. You should have cheese on the top.
- Whisk the eggs, milk, ground mustard, cornstarch and some salt & pepper together in a bowl
- Pour egg mixture over the layers in the slow cooker.
- Cover. Cook on Low for 6-8 hours
Note: This recipe would be easy to double, just use your larger (6-7 quart) slow cooker!

Do you need to bake tater tots or pray fry first?

Heather! That is the great thing about crock pot cooking! You can modify any recipe, but to tell you if it will work without eggs, I just don’t know, as I have never tried it without! Happy Crocking!

Do you think this would work without tater tots? I try to stick to a lower carb diet.
Kara, the only thing I would worry about with this recipe is the liquid! I would definitley modify this recipe if you eliminate the tator tots, as the tator tots most likely would absorb a lot of the liquid. I would not use as much milk, although I would still use some! Does the bacon have to be cooked prior to crockpot or just slice uncooked and put in the pot?

I reallly want to make this with the items I have on hand. Was thinking of swapping out the frozen tots, with frozen sweet potato tots. Canadian bacon with real bacon bits. Subbing out the cheeses for a mexican cheese blend and the whole milk for 2%. I hate to alter people’s recipes without trying it the original way first, then modifying to our taste, just don’t have some of the exact items and would really like to try it out. Any reason you think those substitutions wouldn’t work? Thanks, Lisa!
I tried this recipe for an easy sleepover breakfast for eight 12 and 13 year old girls. They seemed to like it. I doubled the recipe for my oval, six quart cooker. I thought it turned out pretty dry although it’s possible I used too many tater tots (I single layered, but eyeballed it). Next time, I will add at least 6 more eggs and 1/2 milk and more cheese. Is the 10-12 hours for real? Even on low my crockpot would probably burn at 10 hours.

Hello Barb! It is for real to crock for 10-12 hours, but as you know some crocks cook faster and even hotter than others. If you know for a fact that yours would burn at 10 hours, you should check it at 8-9 hours. The great thing about this recipe, is that you can put it on before you go to bed, and wake up to a great breakfast. Thanks for the question and Happy Crocking!
If I do half of the recipe, do I need to change the time of cooking?
Hello Vidmari, the key is to make sure your crock pot is 1/2 to 3/4 full to crock properly, so if you are using a small crock pot the time should be the same. Thanks for the question and Happy Crocking!
can you use frozen hash brown patties with this recipe? Do I need to shred them or just lay them in the bottom of the crock pot?

The photo looks like there are mushrooms in the casserole. I love mushrooms and was thinking of adding anyway (instead of the green pepper my kids won’t eat). Would they add too much extra liquid?

I tried this out this last weekend. It was great – I’ll definitely make it again! I would measure the tater tots – my tot layer didn’t cover the bottom of my slow cooker, but it didn’t seem dry at all.
