Ingredients
2 T. oil3 lbs. chicken, skinless, boneless, cut into 1 inch pieces
1 onion, medium, chopped
1 green pepper, large, chopped
1 tsp. oregano
1 pepper, jalapeno, small
3 garlic cloves, minced
14.5 oz. tomatoes, Mexican style, diced
1/4 tsp. cumin, ground
Slow Cooker Fiesta Chicken makes a great meal for the family with great flavor!
- Heat oil in skillet.
- Brown chicken pieces in a skillet.
- Remove and drain.
- 4. Place, onion, green bell peppers, garlic and jalapeno peppers in the skillet and saute until slightly cooked.
- Add all ingredients to slow cooker and stir to combine.
- Cover. Cook on Low for 8 hours, or on High for 4 hours.
Note: Serve on flour tortillas!

I made this last night with a few variations. I added half a can of black beans and a tsp of Valentina’s medium hot sauce because I like spicy. It was really good. I served it on whole wheat tortillas with a little sour cream and shredded cheese.

This recipe calls for bell pepper in the directions but no mention of it is made in the ingredient list.
Anthony, OMG.. I am so sorry, I must have omitted this when I posted the recipe, but I have corrected it now! I appreciate you pointing it out to me! I have made this with 1/2 green pepper, and also 1/2 red pepper for color…. Happy Crocking, and thank you for bringing this to my attention! 🙂
