Ingredients
1 onion, cut into wedges4 potatoes, peeled and quartered
1 lb. carrots, cut into large chunks
3 c. water
3 cloves garlic, minced
1 bay leaf
2 T. sugar
2 T. vinegar, cider
1/2 tsp. ground black pepper
3 lb. corned beef brisket, with spice packet, cut in half
1 cabbage, small head, cut into wedges
Slow Cooker EASY Corned Beef and Cabbage is definitely a comfort all-in-one meal!
- Put onion, potatoes, and carrots in a 5-quart crock.
- Combine water, garlic, bay leaf, sugar, vinegar, and contents of spice packet in a small bowl; pour over vegetables.
- Top with brisket and cabbage.
- Cover. Cook on Low for 8-9 hours, until meat and vegetables are tender.
- Remove bay leaf before serving.

I use just brown sugar in mine and you wouldn’t believe the flavor it brings out, not to mention the flavor to the veggies

The ingredients say to cut the brisket in half. What is the purpose of cutting it in half if you are putting it in a crock pot? I have a 7 qt crock pot. Would I need to cut it in half or could I put it in whole?
Tabatha it is not necessary to cut in half unless you need to fit it in the slow cooker. Your 7 quart most likely will fit the brisket without cutting in half. Thanks for the question and Happy Crocking!

Lyn it can be crocked on high, and usually it will crock for about half the time so 4 – 5 1/2 hours. With that said usually Corned Beef is better if crocked on Low. Please let me know how it turns out. Happy Crocking!
Are the vegetables very soft in this recipe? We like ours a bit on the crunchy side. also I can’t see a post anywhere that tells how much brown sugar to use??
Hello, this recipe does not call for brown sugar, but if you prefer make this recipe your own and substitute for the white sugar. And the vegetables are tender, but you can alway add them during the crocking time and not at the beginning if you like them crunchy. Love it when we can make a recipe the way we like it! If you were to use a Guiness beer to replace the water, would you eliminate anything such as the vinegar or sugar?
