Ingredients
24 oz. hash browns, shredded, bag1 T. onion, finely chopped
2 c. ham, diced
2 c. cheese, cheddar, shredded
1 c. cheese, mozzarella, shredded
1/4 c. parsley, fresh, chopped
12 eggs
1 c. evaporated milk
1 tsp. salt
1 tsp. pepper
1 lb. bacon, fried until crisp or Sausage if you'd like
I love omelets and bacon, so that’s why I love this Slow Cooker Breakfast Bake. This recipe is definitely in our family’s breakfast rotation. We also always make it over the holidays and when we have guests in town. Made with Sausage is very good too! Enjoy!
- Grease the crock of a 6 quart slow cooker or use a slow cooker liner and grease.
- Mix the hash browns and the chopped onion in a bowl.
- Spread half of the hash browns on the bottom of the greased crock.
- Place 1 cup of the ham on top of the hash browns and distribute evenly.
- Mix both of the cheeses with the parsley and stir to mix evenly. Sprinkle 1/2 of this cheese mixture over the ham.
- Put a second layer of the the remaining hash browns, ham and cheese in the same order, patting each layer down as it is added.
- When all layers are finished, combine the eggs, evaporated milk, salt, and pepper in another bowl, whisking until smooth. Carefully pour the egg mixture over the hash brown, ham and cheese layers.
- Cover & Crock on LOW for 4 to 5 hours.
- About 15 minutes before you’re ready to serve this dish, fry the bacon until crispy and break it into large pieces.
- Remove the lid on the slow cooker and place the bacon pieces or sausage evenly on top of the breakfast bake.
- Cover & Crock on LOW for an additional 15 to 20 minutes.
NOTE: When the bacon/sausage is warm, it is ready to serve.
NOTE: If you are using the NEW Crock-Pot Casserole crock you will want to halve this recipe!

I have been using my crockpot for years, never thought about it for breakfast…. Awesome, can’t wait to try this one.
I’ve never used my crock pot for breakfast so this might be a silly question… It says cook 4-5 hours. But, I sleep longer than that. LOL! DO I set it to switch to “Keep warm” or can I leave it on low all night?
Teryn, Even on low it may burn. I prep my recipe the night before in a crock pot cooking bag, and set my alarm to get up so it will be ready when I expect to have breakfast. My family always loves me when I make them breakfast. Hope this helps! Happy Crocking!
I’m going to use a timer like you can use for lamps. It will turn it on automatically at the right time. I think that will work perfectly.
Hey, this would be a great thing to prepare for Sunday brunch. Just pop it into the crock when you first get up, and it will be ready when you get home.
Does the size of the crockpot really matter for each recipe?
Christopher it really does matter. A rule of thumb is that your crock pot should be 1/2 to 2/3 full to crock properly. Hope this helps, and Happy Crocking!
Can you use regular milk instead of evaporated milk and can you omit the meat and make it more with just the veggies?
Michelle the fun of cooking or crocking is making things your own. You can surely omit the meat for a Veggie Breakfast. I also believe substituting milk for the evaporated milk would also be fine. Please post back with any changes you make and let us all know how it turned out. Happy Crocking!

I think I am going to try this. But do you think I could shred potatoes instead of using a bag of hash browns or should I cube the potatoes? Would I have to do anything to them before they go into the crockpot? Also I am going to add spanich has anyone tried that?
Hi – Yes, you could shred the potatoes instead of using frozen hashbrowns. Wash the potatoes and pierce with a fork then microwave about 5 minutes. (they should be “baked” but not too done – you want them to stay in tact when shredding.) Let them cool, then peel the potatoes and shred with a grater. You can then freeze and use as needed.
PS: I haven’t put spinach in this but I think fresh spinach would be a nice addition! Happy Crocking!
This may be a silly question, but does the egg part fluff up or dissolve into the mixture? I can’t stand the taste or smell of eggs but all the other ingredients sound delicious!
I am looking at purchasing a new crock pot. Do most of your recipes follow a 6 quart size? Is that the standard? There are 3 people in my family so we don’t need any huge amount of food.

Christy I would say most of the recipes are for 4-6 quart slow cookers. The rule of thumb is for a slow cooker to crock properly it should be 1/2 to 2/3 full. So I hope this helps! 🙂
I had never heard of a crockpot liner. Where do you find them? Also, I was wondering how long you cook this since you said it burns when cooked on low. Thanks for this recipe.
Mary, you can find my favorite slow cooker liners here: http://amzn.to/1bdXe2A or there are other brands without elastic that you can find in the plastic bag aisle at the grocery store. Also I would follow the recipe, but you need to know your slow cooker, as some slow cookers crock hotter than others, so yours may take the time suggested or it may take less. How would you change the cooking if used fresh potatoes instead of frozen in a bad?
I might try one of those timers you put on your light when you leave for vacation to turn on your lights at night. Set it for the time you want to turn on your crock pot and when you get up your breakfast is done….walllllla!
I love this recipe and have made this with hashbrowns and then tried it with diced, raw potatoes. My family voted the diced potatoes were the best. I also substituted sausage instead of ham or bacon. Delicious!

Seems like a lot of meat….ham and a lb of bacon. Is this dish on the salty side? Could you only use ham or bacon in this dish?

I’m worried! Been cooking, as directed, and it is still soupy. Just put in oven to finish cooking. Did anyone else have this problem?

Can you substitute Egg Beaters for the Eggs?

My crockpot might be weird, but the only settings it is is HIGH for 4 hours, HIGH for 6 hours, LOW for 8 hours, or LOW for 10 hours. Should I simply put it on low and then set a timer?
Tiffany that is what I do… I prep it the night before in a slow cooker liner, set my alarm and place it in the slow cooker, plug it in and turn it on, and back to bed I go… Some people have wall timers, but I believe it is a personal preference. Happy Crocking!
Skip the condensed milk, use regular. Add red peppers and cayenne pepper.

I made this for my family yesterday morning and um. I don’t know if I did something wrong, but it was the consistency of a mushy quiche. I used Turkey sausage instead of ham because that’s what I had on hand, and I precooked it. I layered everything correctly and the hash browns were frozen when I put them in. I don’t know but it just had a bad texture. My family told me not to make it anymore lol . Maybe precooked diced potatoes and cooked let would be better. I don’t know. 🙂
I made this for tday breakfast. Forgot the bacon and omitted the onions and parsley. It was delicious and got rave reviews from the fam. I am trying again tonight for xmas bfast. I will be subbing jimmy dean sausage crumbled and precooked for the ham and including the onion and parsley. Hope to remember the bacon!
Made this for Christmas morning breakfast today just as directed and it was delicious…everyone loved it and there is enough left over for my husband and I to enjoy tomorrow morning…will definetly make again!
Made this Christmas morning 2013. Added a full 28 oz. pkg. of potatoes O’Brien, added 12 sausage links sliced in addition to the 8 oz. of ham. Didn’t vary the other ingredients. It got a little too done around edges, as my crockpot runs hot. Feel like I should have increased the eggs by one or two since I added more of other ingredients, but it tasted great, and made A LOT! Will make again and vary things here and there. Thanks!
