Ingredients
4 lb. Chuck Roast1 oz. Dry Ranch Dressing Mix
1.25 oz. Au Jus Mix (envelope)
2 T. Unsalted Butter
4 oz. Diced Green Chilis
fresh ground pepper, to taste
If you are looking for an easy roast with a wonderful flavor then Slow Cooker Mississippi Roast is exactly what you will want to make.
- Spray a 6-Quart slow cooker with nonstick spray.
- Place roast in the slow cooker and sprinkle with a little black pepper.
- Sprinkle the top with the ranch dressing mix and the au jus mix.
- Place peppers on top of mixes.
- Add the stick of butter on top.
- Cover. Cook on Low for 8 hours.
- Roast comes out flavorful and super tender every time! Serve with roasted vegetables.
Optional: You can also add veggies of your choice! YUM!

I notice you use grams for your serving sizes. Is that weight or volume. We have a diabetic child that we have to calculate all carbs with and we have had to convert grams to cups in order to get proper carb numbers.

When should I add in the potatoes and carrots? Using small red potatoes.
If you want to add veggies Joanna you can add them at the beginning, or if you like them not as soft, I would add them about half way through.
I would not add veggies for cooking. The absorb too much salt from the mixes and are inedible. This is one of our favorite roast recipes but I always serve it with rice or mashed potatoes and a roasted veg of some sort. Still easy, and never fails.
ingredient list says 2 tbls butter, directions say a stick of butter. that’s a huge difference. I don’t think I would want to put a stick of butter in with a chuck roast that is fatty to begin with..
