Cooking Time:
6 hoursServings:
about 20 pieces
Ingredients
2-1/2 c. dark chocolate chips, like Ghiaradelli1/4 c. coconut milk, canned
1/4 c. raw honey
dash of sea salt
1 tsp. pure vanilla extract
1 tsp. cinnamon
This Slow Cooker Clean Eating Cinnamon Fudge is a family favorite, and one that I get requests for constantly. Use a high-quality dark chocolate for a special indulgence! Note: Be sure to shake the can of coconut milk for several seconds before opening to ensure the right consistency.
- Generously grease a 2-quart slow cooker with coconut oil. (you can use non-stick spray or a liner also, if you are not looking for a “Clean Eating” version of this recipe.)
- Add chocolate, coconut milk, honey and a dash of sea salt to slow cooker; stir to combine. Cover and Crock on LOW 2 hours without stirring. DO NOT LIFT LID!
- Turn slow cooker off and remove lid. Add vanilla and cinnamon, stirring to combine. Cool in uncovered slow cooker, until fudge has reached room temp. (approx. 3-4 hours).
- After 4 hours, stir fudge for several minutes until the sheen that was on top is all gone. Pour the fudge into a greased 1-quart glass dish. Cover and refrigerate 4 hours or until firm.
Optional: Sprinkle fudge with sea salt prior to cutting into small pieces and serving.
Happy Crocking!
2 Weight Watcher Points-plus value. Yummy
Thanks for the recipe! Ghirardelli chips have white sugar and soy lecithin. A much cleaner choice would be Enjoy Life! or make your own.
Enjoy Life chips are my go-to, and an awesome “clean” chocolate. For this recipe, I use a dark chocolate bar without milk or soy. You can find them at most health food stores. Happy Crocking!
Can I substitute evaporated milk?
As long as you are not interested in eating clean, you certainly can… You could also substitute with sweet condensed milk to keep it clean. Hope this helps. 🙂
Does it have to be coconut milk can it be regular. .I don’t like the taste of coconut ?
Hi Maggie! Thanks for your question. You certainly do NOT have to use coconut milk, as long as you are not interested in “eating clean.” Try a can of regular sweetened condensed milk to get similar results! Happy Crocking!
Looks yummy! How many servings did you get for that nutritional information?
Christy this recipe make 20 pieces… Hope this helps!
Will light coconut milk work? That’s all my store seems to carry…
Hi Erin – I haven’t made it that way but if that is your only option, you should give it a shot. Just to confirm it’s the Canned coconut milk, right? Please let us know how it turns out. Thanks & Happy Crocking!
What is eating clean?
Hi Diane! There are many resources online regarding eating “clean.” Essentially, you are choosing to remove any and all highly processed foods from your diet, and replacing with “real foods.” I love this blog http://www.thegraciouspantry.com, where she explains how to stock your fridge and pantry for Clean Eating. Thanks for your question!
Can you double the recipe in a large crock pot?
Hi Elizabeth – you sure can. Happy Crocking!
what happens if you use the box of coconut milk? They didn’t have any can milk …
Krysten, you can try it out, however, I have no experience with boxed coconut milk. You need to look at the ingredient list and make sure it only lists “coconut” as an ingredient, and maybe water. Nothing else. Let us know if you use it, and Happy Crocking!
My crock pot is much bigger than a 2 quart…will this work?
Heather if your slow cooker is much larger, different than a normal way to use the slow cooker you will need to watch it, as it may burn! You can also double the recipe and see if it works better. Hope this helps you! 🙂
This is a great recipe, loved it !
Does it have to be refrigerated to enjoy the next day or two?
I would refrigerate Rachel, but also if you like it at room temperature, you could get some out and let it sit for a little while. Glad you liked this recipe. 🙂
