Ingredients
3-4 boneless skinless chicken breasts1/2 c. olive oil
1/2 c. red wine vinegar
1/2 c. shredded Cashew Parmesan, substitution for Parmesan Cheese
4 cloves garlic, minced
1 T. Italian seasoning
5 red potatoes, cut in wedges
5 carrots peeled and cut into chunks
Your vegetable, starch, and protein, all in one pot! Slow Cooker Paleo Italian Chicken is one easy weeknight meal!
- Grease crock with 1 T. olive oil. Whisk remaining olive oil, red wine vinegar, garlic and Italian seasoning together, to create a “dressing”.
- Place 2 chicken breasts in crock and cover with 1/3 of “dressing” and 1/3 of parmesan. Next, place the other two breasts in crock. Sprinkle with 1/3 of cheese.
- Add carrots, 1/3 of dressing, and then top the mixture with potatoes. Finally, add last portion of dressing and cheese.
- Cover and crock on LOW for 6 hours, or on HIGH for 3-4 hours, or until potatoes are desired softness.

One of our family favorites is Stew Meat. Place 1 Lb. or more, (depends on your family size.) in a greased crock pot. Add 1 can cream of mushroom soup and 1 can of Cream of Celery Soup. Rinse cans with a little water. Stir to mix, and put the lid on. Do not add salt or seasonings. This will make it’s own gravy. If it’s getting a little thick towards the end, add a little milk or water. Cooks on high for 3-4 hrs., or until meat is tender. Serve over baked potatoes, rice, noodles, or bread. Delish.
This looks delish! Do I see onion and drumsticks in the photo though? Can those be added?
I heard this recipe was delicious but I thought cheese was not Paleo? What can I add instead of Parmesan?
Bonnie cheese is not Paleo, but I have found a substitution for Parmesan that is said to be very good! Cashew Parmesan, you can google it, and there is a recipe on the web for it. Let us all know how you like it, if you decide to make it? Happy Crocking!
