Ingredients
12 oz. can lemon-lime soda16 oz. BBQ Sauce
4 boneless skinless chicken breasts
8 oz. can pineapple chunks, drained
2 c. cooked white rice
Slow Cooker Pineapple BBQ Chicken has the unique flavor of the pineapple and the BBQ sauce that compliments any chicken! Delicious!
- Place chicken breasts on bottom of crock.
- Whisk sprite and BBQ sauce together and pour over chicken.
- Cover and crock on LOW 3 hours.
- When above crocking is done, add pineapple chunks.
- Cover and crock an additional 3 hours on LOW.
- Shred chicken, if desired.
Serve over rice.
NOTE: Add a tablespoon or so of cornstarch dissolved in some warm water until smooth to the sauce in crock to thicken, and serve over the chicken and rice.

If you don’t have sprite or lemon-lime soda, could you substitute anything else? This sounds delicious but happen to not keep soda in the house. I would need a different option as I don’t drink or buy soda due to my diabetes. Thanks 🙂

Hi Angela – Thanks for your question! The nutritional facts are actually for one serving. This recipe is higher in sugar due to the BBQ sauce, soda and pineapples. This also considers that one serving would be eating 1/6 of the sauce at the bottom of the crock which most people don’t do. You could also try subbing diet soda to reduce calories although I haven’t done that before so I’m not sure it would work the same. Absolutely Nathalle! Make all recipes your own bone in or even different meats, such as pork chops. Boneless will sometimes just make a recipe easier… Enjoy and Happy Crocking!
I added cayenne pepper and red pepper flakes to the sauce. When I added the pineapple I sliced the chicken into strips and added slices of red and green peppers, served over rice…..loved the sweet/hot with fruit and veggies!
This looks amazing! I have it in the crockpot right now! Do you know if I could freeze a portion of this and reheat it at a later date? Also — I’m thinking of adding red pepper slices to this. Any thoughts on that? add them at the same time as the pineapple?

Hi Lori, please make these recipes your one. Everyone has their likes and dislikes, so if you would like red pepper slices, you should add them to your recipes. Most chicken recipes freeze very well. Enjoy!

Amy I don’t believe there is cornstarch in this recipe… 🙂
Thank you for the reply. It says under note to add cornstarch to make the sauce thicker. I was just wondering if you have to add it to the sauce or will the sauce already be thick?
Amy if you feel you need to add cornstarch, you should dip some o the liquid out of the crock, and dilute it until smooth before you add it back to the crock. Hope this helps!
Can I leave this in the slow cooker on high for about 3-4 hours? I don’t have as much time today but really want to try it out for dinner.
Melissa the crocking time for this recipe is 3 hours on Low, so you don’t need to crock on High and it will be done in the same length of time. 🙂
It doesn’t say weather the pineapple chunks are strained or you use the chunks AND juice… I’m thinking it calls for strained, but please correct me if I’m wrong 🙂 I don’t want it to be too thin. Either way, looking very forward to making this over the weekend!

I used boneless, skinless chicken tenders, diet sprite and fresh pineapple chunks which I added at the same time as the rest of the ingredients as I would not be home to add them after 3 hours. The receipe turned out great!! I did add a bit of cornstarch to thicken it. My husband loved it as did I! Thanks so much!

You can also use water mixed with flour, and make sure it is smooth, so it will not leave clumps of flour in your recipe. Enjoy!
