**Slow Cooker Broccoli Cheddar Soup

Slow Cooker Broccoli Cheddar Soup

Ingredients

2 T. olive oil 1/4 c. whole wheat flour 4 c. chicken or vegetable broth, low sodium (vegetable or vegetarians) 10 oz. broccoli, frozen 3 c. cheddar cheese, shredded 1 garlic clove, minced Salt and Pepper to taste



Love Broccoli Cheddar Soup, and this one is so easy to make, and very tasty!

  1. Place the olive oil in a skillet and whisk in the flour with the oil.
  2. Next, add in the broth and whisk well so there are no flour lumps.
  3. Pour the entire mixture into a slow cooker, adding in the broccoli.
  4. Add garlic, salt and pepper.
  5. Cover. Cook on Low for 6 hours.
  6. OPTIONAL step: Blend the soup by using a hand held stick blender to puree some of the large broccoli florets. This thickens the broth and makes the soup smoother.
  7. Stir in 2 1/2 cups of the cheddar cheese. Continue stirring until all cheese is melted and mixed well in the soup. (reserve remaining cheese for topping)

 

Serve with some steamed broccoli on top, and sprinkle with cheese.

Looks good! Your instructions do not seem to mention the cheese at all though. At what point is it added?

Also, do you add the broccoli frozen?

How many people does this serve? I am planning to make it for a fundraiser and use gluten free Cup4Cup flour.. Wondering if I should double the recipe and change the cooking times?

I am lazy, so I skip the stove step entirely. I add a large potato and a bit more broccoli instead to thicken the soup a bit. The original version would probably win a side by side taste test, but it makes my life a little easier 😉

I am making this as I type this. My question is could I add milk or cream if I wanted? At the end maybe with the cheese? Just curios about creaminess without the milk.
