Slow Cooker Chicken and Vegetables

Ingredients

4 or 5 chicken breasts
32 oz. chicken broth
1/2 large yellow onion (or one small)
4 or 5 stalks celery
8 – 10 red potatoes
6 – 8 carrots
3 garlic cloves
salt and pepper

Slow Cooker Chicken and Vegetables is a great meal for any season, and so easy to prepare. Better yet very healthy!

  1. Cut chicken breast into three smaller pieces.
  2. Slice onion and celery into small thin pieces.
  3. Transfer onion, celery, garlic cloves, and broth into slow cooker.
  4. Place chicken on top of onion, celery, garlic cloves and broth in the slow cooker.
  5. Topping with bite-size chunks of carrots and potatoes.
  6. Salt and pepper, then stir.
  7. Cover. Cook on High for 6-8 hours or until vegetables are tender.

Good and savory. I added a total of 5 garlic cloves and a shake or two of herbs de provence. also used 2 parsnips and 4 carrots and only three large red potatoes, and 3 large chicken breasts. good for the four of us – 2 adults and 2 kids, and a little for lunch for me the next day.
It’s a lot of left over juice. and my boys (7 and nearly 10) liked it well enough.

Made this for the first time and followed directions. Was very bland, even seasoned the chicken breasts beforehand with salt and pepper. Ended up turning recipe into Chicken Vegetable Soup by pulling apart the cooked chicken breasts after 6.5hrs and added a few chicken bouillon cubes to existing broth. Simmered on high with the vegetables for another hour and a half- very tasty and perfect meal on a cold, snowy New England day.
