Many have asked what I am making during the Crocktober Slow Cooking Challenge, so I wanted to share my meal plans with everyone! I typically serve a spinach or mixed green salad when I make a main dish or soup/stew in my slow cooker and that is plenty! Also, if I have a lot of leftovers (like when I make a big batch of chili or soup) I will freeze half of it right away since we can never finish it. That way I know I always have a second meal in the freezer whenever we’re ready for it!
MONDAY: Slow Cooker Ground Beef Lasagna Soup

TUESDAY: Slow Cooker BBQ Chicken Cheesy Sandwiches – I usually eat this without the bun to save on carbs, but my family likes it just as the recipe states, bun and all! Corn makes a nice side dish to this recipe.
WEDNESDAY: Slow Cooker Sundried Tomato Risotto – This can be a main dish, or serve a smaller portion as a side with leftover chicken from Tuesday!
THURSDAY: Slow Cooker Tomatillo Lime Chicken – I love this with a simple side of rice and a light salad! If there are any leftovers, I will put them over a green salad for lunch on Friday.
FRIDAY: Slow Cooker Apricot Pork Tenderloin – This can be made with pork chops, too! That is actually what I am planning for this week since I already have pork chops in my freezer. I’m on a quinoa kick, so I’ll serve that as a side dish along with a salad.
SATURDAY: Slow Cooker Garden Frittata – I have an early flight on Saturday morning so I will enjoy waking up to a healthy breakfast! This definitely beats eating at the airport and with a slow cooker liner, clean up will be a breeze!
