Ingredients
15 oz. black beans, drained, canned14 oz. corn, while kernel, canned
1/2 c. salsa
4 chicken breasts, skinless, boneless, halved
1/2 c. salsa
8 oz. cream cheese, cut into cubes
tortillas or fresh salad greens of your choice
I am a big, BIG fan of Slow Cooker Santa Fe Chicken, as there are so many meals you can make with it, although, this one I have suggested delicious rolled tortillas!
- Combine black beans, corn, and 1/2 cup salsa in the slow cooker.
- Place the chicken breast on top of the black bean mixture; topped with another 1/2 cup salsa.
- Cover. Cook on High for 3 hours.
- Add cream cheese to chicken mixture; cook for an additional 30 minutes.
- Spoon into the tortillas or over fresh greens if you prefer a low-carb option. Add your favorite toppings and enjoy!

do you cook the chicken breasts before you put them in the crock pot?

Making this right now and it smells amazing.
We had that yesterday and we love it! So easy an quick to make and so delicious!!!!
We dind´t have enough beans so we took chickpeas and beans half – and – half.
Made “pulled chicken” out of the chicken breasts and mixed it with all the good stuff in the crocky again for the last 30 minutes.
Used tortilla wraps with tomatos, salat and shredded cheese……and could´t stop eating!

Is there anything you can substitute for the cream cheese?

For the nutrition facts does that include tortillas and about how much is one serving?
