Ingredients
1 lb. sausage32 oz. potatoes, hash brown, shredded, frozen
1 dozen eggs, large, slightly beaten (or 2 cartons of egg substitute)
3 c. cheese, cheddar, shredded
Slow Cooker EASY Breakfast Casserole only has four ingredients and is a wonderful recipe that can cook while you sleep!
- Brown sausage and strain to remove excess grease. When using sausage links or patties, chop them up into bite size pieces.
- Place 1/3 of the hash browns in the bottom of the slow cooker, followed by a portion of the cheese and topped by 1/3 of the sausage.
- Repeat until the sausage is all used up, hash browns and cheese…or until the slow cooker is full.
- Pour the eggs on top of the contents and it will run down through the ingredients in the slow cooker.
- Cover. Cook on Low for 5-6 hours.

I’m wondering if I could 1&1/2 the recipe (or even double it) to feed 8 people? Would the cooking time change? Also, can you tell me what size crockpot you’d use for this? Thanks so much.
Karry thanks for the question. As a rule of thumb a crock pot should be 1/2 to 3/4 full to crock properly. You can certainly make 1 1/2 x the recipe or even double. The cooking time would remain the same if following the rule of thumb…. I would use a 5 to 6 quart crock pot! If you use a crock pot liner, you will know what size you should use. If it only cooks 5 – 6 hrs, what do you recommend for having it at about 9:00 a.m.? Can you prepare it in advance and put in fridge? Then set alarm to get up at 3:00 a.m. to start it?
Hi Pam – that’s what I do – I just set my alarm and then go turn the crock on. You will want to make sure you crock on low so you don’t crack the insert from the temp change. If you typically keep your frig temp really cold, then I would adjust that so your crock insert doesn’t crack. (Otherwise I would suggest preparing it in a different container and transferring to the crock when you get up to cook it.) Please let me know how you like it. Happy Crocking!
Maybe I just missed it — but how many does your original recipe feed? We’re thinking of serving this for a baby blessing and don’t know how many we’d need to make.

Thank you for this recipe. I loved having only one day’s worth of dishes for four days of breakfast, and reheating sure beats cooking every morning. My only complaint was it was a little bland. My initial thought was to double the sausage, but instead of doing that and ratcheting up the fat and calories, what about changing up some of the ingredients? Like a spicy sausage, or shredded pepper jack, or the potatoes with the peppers and onions? Thoughts?
Kind of a silly question, my crockpot has a “warm” setting, would I be able to cook it on warm for 8-9 hours and it be the same??
Ashley, I would be afraid it would not get to the right temperature to cook your breakfast, but you may be able to crock on Low for a shorter length of time, and then have it go to warm a bit sooner, as the key is the temperature. High and Low get to the same temperature, the only difference is that High gets there very fast. Hope this helps, and Happy Crocking!

How would you alter this recipe for a 3-4 qt. crockpot?
Hello Catherine, you can cut the recipe in half…. still layering. Adding more than half the cheese if you like it cheesey, and/or the meat too. Please give me the feedback when you make your breakfast 🙂
