Ingredients
1 lb. Sausage32 oz. Shredded Hash Browns, frozen
12 Large Eggs, beaten
1/4 c. milk
Salt & Pepper to taste
3 c. Sharp Cheddar Cheese, shredded
This is the easiest breakfast casserole recipe for the slow cooker and it is SO tasty! Slow Cooker EASY Breakfast Casserole has only five ingredients (+ Salt & Pepper)!

- Cook the sausage and place on a paper towel-lined plate to absorb the grease.
- Layer the ingredients by placing 1/3 of the hash browns in the bottom of the slow cooker, followed by 1/3 of the cheese and topped by 1/3 of the sausage.
- Repeat layers until you have used all the sausage, hash browns and cheese.
- Whisk the eggs and milk together in a bowl.
- Pour the egg mixture over the layers in the slow cooker.(NOTE: You can use two cartons of egg substitute in place of the eggs/milk, if desired.
- Add salt & pepper to taste.
- Cover & Cook on LOW for 6-7 hours.

NOTE: If desired, you can substitute another breakfast meat like ham or bacon!
NOTE 2: Suggested by reader to lightly salt this recipe.

I want to use this recipe next weekend, the Easy breakfast casserole, but where does the milk come in? Do I mix that with the eggs?
Hi Cassandra – Sorry for not being more clear. You will want to beat the dozen eggs with the milk OR use just the egg substitute to pour over the mixture in the crock pot. I hope everyone loves the casserole! Happy Crocking!

I made this last week and it was a big hit! I’m making it for dinner tonight (Breakfast for dinner, a fav!) but only have refrigerated hash browns, not the frozen – think it will make a difference? Maybe I should put them in halfway thru the cooking? Thanks – I’m addicted to your site and new app!! 🙂
I really want to try this, but 42g of fat is really high. Is that with real eggs, as opposed to Egg Beaters?
Yes Laura this is calculated with the eggs and not the egg beaters. So it will be lower with the egg beaters.
Can I use a larger crock pot? If so, How will it affect my recipe? Could I double the recipe while using the larger crock pot?
Yes Corie, you can double this recipe. As long as the slow cooker is only 1/2 to 2/3 full the crocking time will remain the same! 🙂

If on High I would check it at 3 – 3 1/2 hours.
Can you use fresh cut potatoes or had to be store bought
You can use fresh potatoes Crystal! But you would need to make sure the potatoes get done, as they usually take a little longer to crock than store bought. You may want to microwave them for a few minutes before adding them. Just a suggestion! Happy Crocking!

I use a breakfast sausage like Bob Evans or Jimmy Dean, but you can use any sausage you would like. Make this recipe your own, and enjoy!
This sounds amazing, but if I wanted to serve at 8 AM I would have to start this at 1 AM, and I’m usually long asleep by then. Any suggestions?
Cindy, I usually prep it the night before, and set my alarm to put it in the slow cooker, and allow about 30-45 minutes less time, so it will be ready when everyone wakes up. I realize that may be a problem for some, but I actually check on my kiddos at that time too. Happy Crocking!
I made this this week for visiting family. It was EASY and AMAZING. Not one bite was left I do have a suggestion, you really need to lightly salt and pepper the potato layers.
I USED SAUSAGE AND HAM PIECES I GOT AT KROGER FOR A 7QT CROCK POT …FINGERS CROSSED IT COMES OUT GOOD (Y)
I tried this and I have to say that I was a little disappointed. It is very bland because there isn’t any seasonings in it. I cannot taste the eggs and I messed up and used half Colby/jack so I couldn’t taste the chees either. There isn’t enough sausage and I even added some chopped ham as well. I made a recipe similar to this that you had posted in the Get Crocked Slow Cooker Holiday Classics Special Edition and I was quite disappointed. I followed the recipe exactly, but it came out very mushy and lacking flavor. Any suggestions as to what might have gone wrong?

Sorry for the late response Crock Pot Girl. The recipe that I used that turned out mushy was in the Holiday Classics Magazine Pg. 32 called The Ham and Egg Casserole. The picture on the page looks delicious! And I loved the idea that it could be made and ready for Christmas morning. It just didn’t work out for me….
Looks like a great and easy breakfast to make but the amount of calories and sodium are just too much for this household. Blessings
