Ingredients
4 chicken breast, boneless, skinless1 onion, chopped
8 oz. rice, Zatarain's yellow, box, cooked according to package
1 c. cheese, cheddar
10 3/4 oz. soup, cream of chicken
15 oz. corn, whole kernel, drained
Love the combination in Slow Cooker Cheesy Rice and Chicken. Found this recipe to be very popular with the kiddos as well.
- Place chicken in bottom of slow cooker.
- Scant chopped onions over top of the chicken.
- Spoon soup over top of the onions.
- Cover. Cook on Low for 8 hours.
- Just before serving, add in cooked rice, corn, and cheese.
- Stir to combine.
Optional: Can also add fresh or frozen broccoli, if desired.
Serve hot with a delicious salad, and you have your meal.

What size crock pot did you use? I wish that information was always included with the recipe. Thanks!
Thanks for the question T.L. I don’t always include as some of the readers may think they can’t make something if they don’t have that size crock pot. When looking at the ingredients in the recipe, and how it’s made that is how you can judge what size crock pot to use. Rule of thumb is to make sure the crock pot is 1/2 to 2/3 full for your meal to crock properly. Now with that said I would probably use my 4 quart crock pot for this recipe. Hope this helps… 🙂
Can this recipe be cooked on high for half the time if someone doesn’t have all day to cook it?
Yes Erica it can, crocking slow will blend the flavors more, but High will still work fine. Happy Crocking!

I see broccoli in your picture, but notice there isn’t any requested in your ingredient list or named in the steps…I would like to add some in mine. Would you recommend adding in broccoli in the beginning or do you think it’d get too mushy?
Hi Melissa, I have it listed under optional, as that is the way I make it. I would add the broccoli in the last hour if you like it a little crisp… Happy Crocking!

Bree you chicken can be frozen, but you would want to add an hour to an hour and a half to make sure chicken gets done. This may affect the rice to get too mushy, so you may want to adjust when you add the rice as well. Hope this helps! Happy Crocking!

Can you use frozen chicken in crockpot
You can Allison, but you will need to add extra time to the crocking. I prefer my chicken thawed unless the recipe specifically calls for frozen. 🙂
One time I used frozen chicken and got some blue gray residue
would it be possible to substitute quinoa for the rice? if so, how would this change preparations?
