Ingredients
1 1/4 c. Steel Cut Oats (Gluten-Free, if desired)2 1/2 c. Vanilla Almond Milk (or coconut milk)
1 tsp. Vanilla Extract
¼ tsp. Coarse Salt
1/3 c. Creamy Peanut or Almond Butter
2 Extra Ripe Bananas, sliced (the browner, the better!)
1 T. Honey
1 T. Coconut Palm Sugar (or brown sugar)
Elvis would be crooning if he woke up to this hearty and delicious Slow Cooker Gluten-Free Peanut Butter Banana Oatmeal! (You can decide if you want to add some bacon!)
- Place oats, almond milk, vanilla, salt and peanut butter or nut butter in a 3-quart slow cooker and mix well.
- Arrange banana slices over top the ingredients in the crock.
- Drizzle honey and sprinkle sugar on top.
- Cover and Cook on HIGH for 1 hour, then let heat on WARM overnight, up to 8 hours. (Note: originally, I had been cooking this on LOW for 8 hours but found that depending on what slow cooker I used, this was far too long. I have had success with this method (1 hr high, overnight on warm) for overnight cooking in several slow cookers. If you don’t have overnight, cook the oatmeal for up to 4 hours on LOW.
- Serve with shaved coconut or with a sprinkling of chocolate chips, if desired.

I have a large oval crock pot. I just realized it may be a small roasting pan. This may be why within 2 hours, this had almost over cooked on low. It says corning ware electrics on it. And it has a switch that turns from off to low to high to auto. That’s it. It’s a ceramic inner peice and a glass lid. I know I measured correctly for all ingredients. So what gives? 8 hours and I would have woken up to charred oats!
Hi Crystal! I am sorry you had trouble with this recipe. I once had a crock that gave me a lot of trouble too (it always cooked too hot!) Maybe you can add a nice quality crock to your Christmas list?! That being said, I adjusted the recipe to 6-8 hours on LOW. Also, check the amount of milk you added, making sure it was the whole 2 cups. Let me know if you get better results next time. Happy Crocking!

I just made this overnight per your instructions and woke up to burnt oats. I hope it didn’t ruin my crock pot. What a bummer. It smelled so good overnight.
Amy I am so sorry… it may be your slow cooker crocks hot, if you decide to make it again you will want to crock for a shorter time.. Happy Holidays!

How big of a crockpot are these recipes designed for? I have several different sized crocs. Thanks!
Christine they are for several different size slow cookers. The key is to make sure your slow cooker is 1/2 – 2/3 full to crock properly. Sometimes you just need to look at the ingredients to see what size slow cooker you will need to use. Enjoy and Happy Crocking!
Can you use quick oats instead?
