Ingredients
1 lb. Lean Ground Beef (90%+ Lean)10 oz. RoTel Tomatoes
16 oz. Frozen Tater Tots
10 3/4 oz. can, Cream of Chicken soup
1 Small Onion, diced
6 oz. Frozen Peas, cooked
2 c. Shredded Sharp Cheddar Cheese
Looking for a fun meal that the kids will even like to help make? Slow Cooker Tater Tot Casserole is it! Whenever I make this my 5 year old wants to help out in the kitchen. Tater Tots are just fun! (Note: Trader Joe’s makes a great frozen tot.) Enjoy!
- Grease a 6-Quart slow cooker with non-stick cooking spray. Set aside.
- Cook onions with 1 T. oil in a large skillet over medium-high heat until almost translucent.
- Add ground beef and tomatoes to skillet and cook until meat is no longer pink.
- Transfer mixture into the prepared slow cooker.
- Spread Cream of Chicken Soup over top mixture.
- Place tater tots across the top of all your ingredients listed above.
- Cover. Cook on Low for 2 – 3 hours.
- Reduce heat to Warm setting, add peas and shredded cheese. Replace lid on slow cooker and keep on Warm until cheese is melted.
NOTE: You can also used ground sausage in place of the ground beef to give it some zip! YUM!

What is RoTel tomatoes?
Hello Stacy, RoTel is the name brand of the tomatoes, and they are diced tomatoes and green chilies. They add a little kick! The can size is a 10 oz. can, if this is something you are unable to find. You could add 10 oz. of diced tomatoes, and add a little green chilies. Don’t add too many green chilies, as it will add a lot of heat to this recipe. Happy Crocking!
Hey, Stacey, I usually buy my Rotels at whatever Dollar store I go to. The Chilis are a nice bump in the tomatoes.They’re cheap and I use them to add a little spice to everything from meatloaf to chile to whatever. Not super spicey.
Do you make the soup as directed on can or without adding the water?

Do the tator tots get brownin the slow cooker??
Hey Dawn they brown a bit in the slow cooker, but if you like them a little browner you can place them under the broiler in the oven for a few minutes. Happy Crocking!
Do you have any suggestions for a substitute for the rotel?
Hi Kaela, the Ro-Tel tomatoes are in a 10 oz. can, therefore you can use 10 oz. of dice tomatoes, and if you want the kick like the Ro-Tel, you can add green chiles to taste. Happy Crocking! 🙂
This is a go to meal for our family! We’ve never made it in the crock, though, so excited to try it out!! We add a 1/2 a bag of frozen mixed veggies in to make it a whole meal. 🙂
I make it with velveeta cheese, milk and butter smelt together in a sauce pan in replacement for the soup. Yummy.
can you make this in oven if so what temp and how long
At what point when you browning the ground meat do you add rotel and onion? During the whole process or brown the meat, drain then add the rotel and onion…thanks
Hi Brian, you brown the meat first, then just add in the RoTel and onions in when browned, so the onion can cook a bit. It will tenderize the onion, and also give the beef added flavor. Hope this helps, and Happy Crocking!
I made this recipe with two adjustments: I used sausage, and the Rotell tomatoes I used had habaneros in them.

While my kids & I all love cheese, my husband doesn’t. ( I know – GASP!). Does the cheese make this dish or do you think it could be omitted?

I made this tonight and liked it, but my husband didn’t. I think I’ll try it with sausage. He isn’t a huge fan of ground beef.
I use this same recipie but with cream of mushroom soup instead! Very good!
Is there any way I can just put the uncooked ground beef in the crockpt and let it cook while I’m at work?
I’ve not made it that way Barbara, but you can certainly make this recipe your own, and see how it works out. I would think if you are gone for 8 hours that that might be too long of a time???? Please post back and let me know how it turned out!

What size crockpot did you use, or does it matter?
It does matter, as your slow cooker should be 1/2 to 2/3 full to crock properly with any recipe. I used my 5 quart for this recipe. Happy Crocking!
Can you make ahead? Meaning store uncooked in the refrigerator overnight the turn on the crockpot in the morning?
You can Elsa! I prep many meals the night before, but you would want to make sure if you are making in the crock that you set it out for 1-2 hours before turning on so it doesn’t crack the crock. I like to make it and refrigerate in the slow cooker bags, so I can drop it in and turn it on to protect the crock from cracking! Thanks for the question, and Happy Crocking!
