Ingredients
4 lg. baked potatoes2/3 c. butter
2/3 c. flour
6 c. milk, whole or 2%
3/4 tsp. salt
1/2 tsp. pepper
4 green onions, chopped
12 slices bacon, fried and crumbled
2 c. shredded cheddar cheese
1 c. (8 oz.) sour cream
Slow Cooker Baked Potato Soup is a great recipe to use up those left over baked potatoes.
- Cut baked potatoes in half. Scoop out pulp and put into a small bowl.
- Melt butter in large kettle. Add flour. Gradually stir in milk. Continue to stir until smooth, thickened, and bubbly.
- Stir in potato pulp, salt, pepper, and three quarters of the onion, bacon and cheese.
- Cook until heated. Stir in sour cream.
- Transfer to slow cooker on Low.
- Top with remaining onions, bacon, and cheese.
Note: Take to any potluck, or serve on a buffet table, straight from the slow cooker.
Variation: Add several slices of Velveeta cheese to make the soup extra cheesy and creamy.

I’m on a wheat-free diet. Would corn starch work instead of flour?
This is a very good question, and because we have someone in our family that has been on a wheat free diet, I know she uses, corn starch as you mentioned, but she also uses rice flour or potato flour. I know this is a crocking web site, but it seems that this recipe would work just as easily if we kept it in the kettle on the stove rather than transferring it to the crock pot for 30 minutes. Am I right about that? Can I simmer the mixture on the stove on low until heated through?
Yes, you can Kelley, but in the crock pot it will stay warm, and you won’t have to watch it as closely on the stove! Thank you for your question!

that was wonderful soup=i’ve made many varieties of ‘potato soup’ and that was the best by far. smooth and silky and easy, YUM!
Can I put soup in crock pot and leave on low for several hours or will it burn?
Lisa even on Low it will cook as if you are crocking on high, the only difference is that Low takes a longer time to get to the High temperature than the High will, therefore, I would not crock it longer than recipe calls for.
