Ingredients
1 c. zucchini, thinly sliced1 c. yellow squash, thinly sliced
1/2 c. red pepper, seeded and diced
2 cloves garlic, minced
1 c. asparagus, cut into 1 inch pieced
8 large eggs, beaten
1/2 c. fontina cheese, grated
1/2 c. mozzarella cheese, grated
1/2 c. Parmesan cheese, grated
1/2 c. fresh Italian parsley, minced
1 tsp. salt
1 tsp. freshly ground black pepper
This Italian-style breakfast is a great alternative for vegetarians. Complete Slow Cooker Fresh Vegetables & Three Cheese Frittata with fresh fruit, toast and a cup of steaming Italian espresso.
- In a medium skillet, saute the zucchini, yellow squash, red pepper and garlic until tender.
- Transfer the vegetables to the slow cooker, and add the remaining ingredients, mixing thoroughly to combine.
- Cover. Cook on Low 4-6 hours or on High for 2-3 hours.
Note: Virtually any vegetable can be used in a frittata.

The recipe is called “Three Cheese Frittata”, but I only see 2 in the ingredient list: parmesan and fontina. Is there are 3rd cheese? Also, the pic has very different ingredients, such as broccoli. Did you make it this way, and if so, how does the broccoli hold up in the slow cooker? Thanks
Angelle, You are absolutely correct, it was a typing error, and I have corrected the recipe! Thank you so much… I have found that occassionally when making a receipe that I need to substitue to use what I have on hand. All vegetables are great in the crock pot, and broccoli happens to be one of our family’s favorites! Happy Crocking!

I am hoping to make this tonight, so hopefully you get this in time, but I’m just wondering how did you remove it once it was cooked? Usually they just slide out of pans but I’m assuming this one would be a little trickier!
