Slow Cooker Ground Beef HoBo Stew

  • Cooking Time:

    4 - 6 hours on Low

Ingredients

1 T. oil
1 c. onion, chopped
1/2 c. peppers, mixed sweet and hot, chopped
1/2 c. celery
1 T. garlic, minced
1 1/2 lb. ground beef
2 T. all purpose flour
1 1/2 c. broth, beef
34.5 oz. tomato juice (3 cans) or original or spicy V-8
14.5 oz. Rotel tomatoes, diced
2 potatoes, large, peeled and diced
2 c. carrots, fresh, diced, (about 2 large)
2 c. corn
2 c. cut green beans
Dash of Worcestershire sauce
Couple dashes of hot sauce, or to your liking
1/4 tsp. Cajun seasoning, optional
1 tsp. kosher salt, or to taste
1/4 tsp. black pepper, or to taste

Great alternatives to HoBo Stew is you can make it with any kind of meat; venison, stew meat, sausage, chicken, and etc. Same thing with veggies… any vegetable that pleases your family! So GOOD and it has a little kick! YUM!

  1. Heat oil over medium high heat in a large pot.
  2. Cook and stir onions, peppers and celery until softened, about 4 minutes.
  3. Next add ground beef and garlic, cook meat until browned and cooked through. Drain off excess fat.
  4. Scant meat with flour and cook and stir for an additional 3 minutes.
  5. Transfer to a 6 quart slow cooker
  6. Combine the beef stock, V-8 juice and diced tomatoes, stirring in the potatoes, carrots, corn and green beans. Add Worcestershire, hot sauce and seasonings to taste. Stir.
  7. Cover. Cook on Low 4 – 6 hours or until the vegetables are tender.
  8. Taste and adjust seasonings as needed.

Hobo stew can be served as is, or spooned over rice or mashed potatoes. Serve with hot rolls, cornbread, or biscuits. Dinner is ready!

NOTE: Take into consideration hot peppers and other spicy seasonings if you use a spicy V-8. May also substitute a can of Rotel tomatoes for the diced, if desired.

Variation: To convert to a Hobo Soup, increase the beef stock/broth to about 4 cups or to desired consistency.

If I use stew meat in this recipe do I need to cook it before I add it to the crockpot?

Is really good if you sub tomato soup for v8 and use cream corn, adds a sweet savory flavor rather than tangy or spicy
