Slow Cooker Pumpkin Latte

Ingredients

4 c. of milk (can sub almond, coconut or soy milk if you prefer)
1/2 c. pumpkin, canned
1 T. vanilla extract
1 tsp. of pumpkin pie spice or 1/2 tsp cinnamon and a sprinkle of cloves and nutmeg
1/2 c. sugar (or sugar sub of your choice)
2 c. of strong brewed coffee or espresso
Whipped Cream or Cool Whip topping (optional)

With this recipe for a Slow Cooker Pumpkin Latte, you can skip the expensive coffee place and enjoy your favorite fall beverage in the comfort of your own home – right from your Slow Cooker! This recipe can be doubled, tripled or even cut in half depending on how many you are serving. You just need to adjust to the crock pot size for the quantity!

  1. Pour all ingredients except the whipped cream into a slow cooker.
  2. Whisk to mix well.
  3. Crock on High for 2 hours until hot and the flavors blend. (It will smell great!)

Optional:  Top lattes with whipped cream and a dash of cinnamon.

Do you have to use coconut milk? Or can I use a low fat or fat free milk? I’m lactose intolerant but really don’t like the coconut flavor! Thanks

This would be a very guilty treat for me since I’m diabetic. I’m allowed 4 carbs each for lunch and dinner, 2 -3 for breakfast and 1 for a treat. I think I will sub some Splenda for half of the sugar and low fat milk. I think we are going to have some Christmas morning

Hey, I just made this and went to fix a cup and something went wrong… My milk looks like it just spoiled and is separated from everything else. I used whole milk and it is still good and in date, I doubled checked and I did everything right.. Do you have any idea what could have gone wrong? I also had something similar in a soup I fixed yesterday that had half and half in it. Thanks for any help!

I have this in the crock pot right now heating. I plan to add a 50/50 mix of pumpkin spice Kahlua and cinnamon spice Kahlua. I also used fresh pumpkin puree.

We made it yesterday and it was very good. ♥ But we both thought is was to sweet for our taste. So next time I will use no sugar so anybody can sugar it by themself like a cup of coffee.

And we had 3 cups of it left over so I put a stick of butter and 1,5 cups of oats into it.

Overnight on low for 8 hours I got a delicious pumpkin latte oatmeal! 🙂

Can I mix all the ingredients the night before and store in the fridge and have it all set to crock in the morning, as I have other things to do…Thanks for the recipe and the help!!!!

I just made this. Sooooo good! I substititued 2 of the cups of milk for one cup Eggnog Coffee Mate and 1 cup Fat Free Original Coffee Mate. I’m also not a big coffee lover, so I made one regular cup through my Keurig k-cup coffee. I than made the second cup using the same pod, but lower water setting.

Made this latte at Thanksgiving. It was delicious. One thing however, the pumpkin left a sentiment and we had to strain it as we ladled it into cups – did I not mix it correctly? But it did not stop us from enjoying the whole batch. I will make it again for Christmas 😉

I just made a double batch of this last night because my husband was craving the pumpkin spice capp from the local 7-11… I gotta say there is not much left… It is amazing!!! I love anything in the crockpot and knowing I can do this now is even better….
