This recipe for Slow Cooker Pepperoncini Peppers Beef Roast makes the best sandwiches. I have spent a lot of time in Chicago, where my family eats Italian beef sandwiches all the time – this is my version!
- Place beef roast in slow cooker.
- Sprinkle onion soup mix and pour beef and chicken broth over roast.
- Pour entire jar of pepperoncini peppers w/juice over beef roast.
- Cover. Cook on low for 10 hours.
- Remove roast and shred. Return to slow cooker and stir to combine with juices.
- Serve on toasted hoagie rolls topped with provolone cheese. (I like to serve au jus on the side, too!)
Happy Crocking!

I had a simular version made of this and it was amazing! Love that you can throw it in and go. And my whole family actually ate it!
I am so going to try this this week! I am wondering, though… where do you get your nutrition facts? I love that they look like labels!
I have made this several times and it always turns out amazing! I am making it today for Sunday night football! My husband and his friends love it too. Instead of whole pepperoncinis, I have used the pepperoncini rings, which works the same and cuts out the time of removing stems, etc. Enjoy!!
