Ingredients
1 c. pecans, chopped and divided1-1/2 c. oatmeal (use rolled oats or steel cut oats ONLY)
4-1/2 c. milk
3/4 c. dark brown sugar
1/4 c. butter, unsalted, or 1/2 stick
1 tsp. vanilla extract
My family LOVES waking up to Oatmeal, and the Slow Cooker Pecan Pie Oatmeal is no different! You can imagine the wonderful aroma you will wake up to!
- In a small skillet, melt the butter and toast pecans over medium to low heat. (you don’t want to burn them)
- Stirring frequently, watch carefully to avoid burning.
- Reserve 1/4 c. pecans for serving.
- Combine 3/4 c. pecans and remaining ingredients in the crock of a 4 quart slow cooker.
- Cover. Cook on Low for 7-9 hours. (My slow cooker is programmable, so I set it for 8 hours. When it is done it turns to Warm.)
NOTE: Serve with the reserved toasted pecans on top.

Hello Mimi! I have doubled this recipe! As a rule of thumb just make sure your crock pot is 1/2 to 3/4 full to crock properly. Enjoy and Happy Crocking!
3 words apply to this recipe…OMG!!! I could not stop ‘picking’ at it after it was cooked. It is so yummy and comforting. I switched up the recipe a bit…coconut oil instead of butter (’cause I didnt have any available), 1/2 cup of egg whites (for an extra hit of protein) and about 1.5 tsp of cinnamon (’cause whats oatmeal without cinnamon). This will certainly be on heavy rotation in our household. Thanks CPG!

So that didn’t work! My pecans got burnt in the crock pot. Not sure what I did wrong. A few got burnt in the skillet but in the crock pot it had an odor of yumminess mixed with a burnt popcorn smell. OY! Going to try again tonight 🙂
This looks so yummy! Can’t wait to try it. One question, though: is that 1 1/2c dry oats or cooked oatmeal? I’m assuming with the amount of milk called for, that it’s dry oats or steel-cut oats.

What size crock pot should be used? I only have a 6 quart one.
Hello Jackelynn! I used my 4 qt crock pot for this recipe, but you could double it and make it in your 6 quart, and have left overs….. plus I know you will enjoy! Happy Crocking!
This recipe sounds wonderful. But there’s a lot of sugar. Is there a way to make it healthier without so much sugar and butter?

I would love to try this – and have a question that has NOT been answered – since there are only 2 of us in the household, it will make more than we can put away in one sitting – optimally, anyway. Is this something I can make and then it just needs to be nuked in the subsequent mornings?
Yes you certainly can do that… it will refrigerate for a couple days, and taste relish!
I am looking for recipes for 1 or 2 servings. I have one of the little Dip size serving crock pots….no temperature controls, just plug it in. Do you have or do you know where I could find any recipes for this? Especially breakfast and desserts.

Sandra most of the recipes call for a larger slow cooker. You will find some using this size slow cooker under the appetizer section of my website. As a suggestion, you could also choose a recipe that serves 4 and cut it in half… Hope this helps!

How long will this stay fresh in the refrigerator and can you freeze it?
Hannah it will stay in the refrigerator for a few days, you can also freeze it, and the night before set it in the refrigerator to thaw. Thank you for the question… 🙂
Making this now. I didn’t notice the recipe calls for unsalted butter untill it was too late lol. Is it ok to use salted butter?
Judy you can use the salted butter, it will add some salt, but I am sure it will still be YUMMY!
So are Rolled Oats the same as Old Fashioned? I didnt find info on the container…..
You ask a very good question, and actually one I had to research to answer correctly. Basically they are one in the same, only difference is that the Old Fashioned oats are rolled flatter than the Rolled Oats, you just don’t want to use Quick Oats, as they are different. I made this last night put it on at 930 it was burnt to a crisp by 6. It smelled so delicious all night I’m not sure what happened? I put it in for 8 hours than my croc goes to warm. So sad 🙁
Kristin it sounds like your slow cooker cooks hot, because you said it smelled delicious all night I am thinking in your slow cooker you maybe should crock for 6 hours and let it go to warm. It really is delicious!
Unfortunately, this was a huge flop in my house. I cooked it on low for 7 hours and when we came down for breakfast it was also a burnt mess. Still love the concept. Will try it again some other day in a different crock to see if it helps.
Do you need to melt the butter first?

So I made this and put it in the night before. I woke up to oatmeal mush. And the flavor just wasn’t as great as I had hoped I followed the directions to a T. What did I do wrong?
Christina, it sounds like your slow cooker crocks hot, and therefore your oatmeal was over cooked. Every slow cooker cooks differently, and that is always a problem until you figure out how your slow cooker cooks. Hope this helps, and Happy Crocking!

The first time I made this in my crock pot and it was OK – probably over cooked. The second time I used my fuzzy logic rice cooker that has a porridge setting. I let the steel cut oats soak in the milk in the fridge overnight and then added the remaining ingredients in the morning. It is the best oatmeal I’ve ever had. Thanks for posting this!
