My husband loves these! I add a little lime juice at the end.
I love crocking, but I’m a bit confused about reserving cooking liquid when you don’t put any in to begin with. I cannot imagine the pork making enough liquid of it’s own. Any thoughts?
Kim, It doesn’t matter what type of meat you’re cooking in your crock, there’s liquid even when you don’t add any. It’s from the condensation that developes on the lid and drops down.
Love this recipes!!!
Would it be ok to just use regular chili powder or does it have to be chipotle chili powder? I only have regular on hand. 🙂
Thanks for the question Amanda. Yes you can use chili powder in place of chipotle chili powder, but with that said chipotle is spicier than regular chili powder, and if you like the heat you would want to use more of the regular chili powder in place of the chipotle chili powder. So with this recipe you may want to use 1 1/2 T. of regular chili powder to start, and then adjust if you would like more heat to the recipe. Enjoy and Happy Crocking!
I just made this today for dinner. The smell alone was mouth watering. I loved the rub!!! We are going to serve this with corn tortilla, re-fried beans, lettuce, sour cream, guacamole and cheese. Just like they serve it at our favorite Mexican restaurant!
We made this today and it was very tasty! We tend to have issues with our pork being dry when slow cooked though. Any suggestions for us?
It may be that your slow cooker crocks too high, you can do a test on the slow cooker to check it out! Google test slow cooker temperature. Hope this helps, if not you can also contact the manufacturer of your slow cooker, and see if they can help you. Thanks for the question!
