Ingredients
10 3/4 oz. soup, golden mushroom, condensed, canned3 T. soy sauce
1 tsp. ground ginger
1 1/2 lb. chicken tenders
16 oz. vegetable, blend, broccoli stir-fry, frozen
4 oz. mushrooms, sliced, drained, canned
1/2 c. cashews
Hot cooked brown rice* (optional)
Slow Cooker Cashew Chicken is so good, and with this recipe it is simple and easy to make too!
- Combine mushroom soup, soy sauce, and ginger in a 3 1/2 or 4 quart slow cooker.
- Stir in chicken, stir-fry vegetables, and mushrooms.
- Cover. Cook on Low for 6 to 8 hours or on High for 3 to 4 hours.
- Stir cashews into chicken mixture.
NOTE: Serve over hot cooked brown rice*, if desired!

wont the veggies get mushy if you are using frozen?
Karen if you like your veggies a little crispy you should add them closer to the end of the crocking! Enjoy and Happy Crocking!
I have a bigger crock pot then what the recipe calls for. Does that matter and if so can I just double the recipe?

Yes Ranay! This is a great question! Your slow cooker needs to be 1/2 to 2/3 full to cook properly. So when you have a large slow cooker sometimes you need to either take it 1 1/2 times the recipe or even double in most cases. You can always freeze when you don’t need at the present time. But for what you freeze don’t freeze with the Cashews as they will become soft. Happy Crocking!

I purchased Campbell’s, but I am sure there are other brands! You might want to google it or ask your grocer if they carry it. 🙂

Do you have any recommendations for how to make this recipe dairy-free?
Ginelle, I actually went on line and found that there are a few websites that can help you with this. They make their own soup to use in recipes, by using almond milk, but you may also be able to use almond mild and a little flour for thickening, in place of the soup.
